Hi,
What is the correct color to use for carpet in a 1987 with a gray interior? Is it Smoke, Titanium, or Opal gray?

I think it's whatever was correct for the normal '87 Mustangs.
HOWEVER, when buying carpet, I always tell people to ask for swatch samples of the colors. Vendors do not have access to the OEM carpets so they buy from the repro carpet manufacturers.
These manufactures have no clue what colors go on what car for what year. They make a rainbow of colors and it is up to the vendor selling that carpet to figure out which of the original colors and names match to the carpet manufacturers' color codes.
As such, colors are often close but never perfect and some vendors don't get the years right or know about subtle changes in color between years. Especially the grey. There were like 5 greys used from 79-93.
So ALWAYS get a swatch sample of two or three colors really close to what you want. Then pick the best one.
Maybe someone here has replaced this color carpet and can chime in with the exact color they ordered.

Smoke is the correct color. If you can take swatch of a piece that was hidden under a trim piece it will help.
