I finally went with Hagerty. They get good reviews (although I know one person here had a really bad experience with them). I was a little shy of the brand new company covering me adequately.

You won't hear a complaint from me, they were most excellent to deal with and I had my money before I thought it was even possible.
Also bought my car back for agreed value since it was a loss, and they paid me fuel and tolls so I could go get it 200 miles away.
Two Thumbs up for Hagerty from me.
1986 Mercury Capri 5.0 T-Top
1985 Ford Mustang GT Vert
1988 Ford Mustang GT
I'm now paying $114/year for $8k agreed value with Hagerty.
$100k liability
$100k uninsured
$500 deductable
The deductable dropped it A LOT. Zero deductable IMHO is silly since I need replacement value. I can get $500 in damage fixed easily.
They would only give me $8k agreed value though. I tried to argue a bit but she said that I would need to get a spreadsheet of cars that sold and/or costs to restore a car like mine.
I'll take the $8k for now. It's not much money.
I passed on the Classic Underwriters because they are very new. I just didn't feel comfortable. However, they never said anything about the $14k agreed value I asked for...when they went to the underwriter, maybe that would be an issue too like Hagerty.
Classic sounded a tad more restrictive on use. I wish they would describe their restrictions, allowances on use better. ALL of them are INTENTIONALLY vague.
