I thought the Coupes all started life as a GS (so as to not have the
Ford RS air dam)? So why would it surprise us about the blue?

However in the 1985 Mercury Upholstery and Color book, it doesn't
list blue as an option with the "sport seating" (Recaro):

There is no mention of an RS, just a "5.0". I thought the RS was
only in Canada that year.

Since the "5.0" is the only one listed that can have sport seating
and cannot have ode 3L for paint, I can see why they would need to
special order it under a new code to get the 5.0 in Blue with Sport
Seats.
