Well, you asked for opinions so here his the way I look at it.

If I were going to get rid of one of the Fox bodies, I would make it the GT.
You said that most people like the GT better than the asc/McLaren, this is
the same thing that I have run into with my car. After explaining to them
what it is, and that it is not a "souped-up" Mustang, they seem
uninterested. That is fine with me because in my experience the opposite
will happen in the years to come.
As the years go by and the trends come and go, originality always comes back
in style. If I go to a car show and there is an unmodified, stock early to
mid-eighties Mustang there I get excited because you just don't see
unmodified Mustangs of that vintage around anymore. Besides, Mustang GT's
are a dime a dozen and asc/McLaren's are rare to start with and will only be
more so as the time passes.
Several years ago when I was searching for a '70-'71 Ranchero to buy, many
of my friends would ask me why I don't just get an El Camino instead. My
question to them was and still is, "when was the last time you saw an early
seventies El Camino on the road?" It usually gets a response of , "I just
saw one a few weeks ago." Now, when was the last time you saw an early
seventies Ranchero?
Now, I like to look at a nice Mustang just like the next car nut does, but
what I don't care for is seeing 20 or more cars that are just like mine
whenever I go to a car show or even the local cruise in.
Above all, do what makes YOU happy, not what makes everyone else happy.
